Crock Pot Mexican... Something

I made a really easy and delicious crock pot dish tonight.  Sometimes it's a good thing when we are low on groceries because it forces me to experiment. This was an experiment that went well!

Crock Pot Mexican... Something?

1 lb. ground turkey (shredded chicken would be really good too!)
2-3 large green peppers chopped
1 large onion chopped
1 can black beans drained and rinsed
1 can sweet corn drained
1 can diced tomatoes w/ juice
1 basket mushrooms sliced
2 Tbsp chopped garlic
1/2 tsp crushed red pepper flakes
1/2 tsp seasoning salt
1/2 tsp cumin
1/2 tsp chili powder
2 Tbsp olive oil
1 cup water

Put everything into the crock pot, even raw ground turkey broken into bite size pieces.  Cook on low all day or high for 4 hours. Serve over brown rice. Topping options: shredded cheese, sour cream (plain greek yogurt in our house), fresh cilantro, diced avocado, or corn chips.

FYI, I'm kind of guessing on the seasoning amounts. I never measure when I'm cooking. Soooo....good luck with that part for all you by the book people out there. :)

Zuppa Toscana Soup!

I'm taking advantage of all this rainy weather and continuing on with lots of soups on the menu. Right now my kitchen smells like Zuppa Toscana soup. No I did not order carryout from Olive Garden. My Zuppa puts that to shame. Here's the recipe.

Zuppa Toscana Soup

1 Tbsp olive oil
1 Tbsp finely chopped garlic
1/2 tsp crushed red pepper flakes
One large onion diced
1 lb Italian sausage (I get mine at the Fareway meat department)
2 boxes Vegetable broth (I use Swanson 32oz. 100% Natural no MSG added)
10-15 small red potatoes sliced into rings
12 oz. Heavy cream (I use Picket Fence Creamery)
1 or 2 big bunches of fresh Kale, chopped to bite size
salt and pepper to taste

In a large pot cook olive oil, garlic, red pepper flakes, onion, and sausage, stirring often to ensure even cooking. Add in vegetable stock and sliced potatoes. When potatoes are cooked through add cream. Add chopped Kale right before serving.
I like to pair this with some yummy bread or toasted baguette topped with Parmesan and fresh basil. YUM!

Mom's Potato Soup

 Mom's Potato Soup
(this is NOT organic in any way or very healthy for you, but once you taste it you really won't care. Maybe someday I will work at making it healthier but at this point I'm not interested in changing an already perfect and soothing to my soul recipe of my momma's.)

6-8 medium sized potatoes, peeled and chopped bite size
one bag of frozen mixed veggies (or whatever veggies you like)
one large onion, finely chopped
6-8 large polish sausage links cut bite size (I usually use John Morrell polish sausages. I've also used kielbasa, or left over spiral ham. YUM!)
8 cups of water with 3 heaping Tbsp of chicken soup base OR 8 cups of chicken broth
1 Tbsp finely chopped garlic
8 American cheese slices
salt and pepper to taste

Combine all ingredients in a big soup pot or crock pot. Cook until potatoes are tender. Easy Cheesy.
This feeds a large group or makes for really good left overs!

Baked Oatmeal

Baked Oatmeal
by Erin Meschke (although I think she's changed this recipe in the last few years by making it even healthier, but I haven't gotten the updated one...yet.)

1/2 C apple sauce
1 1/2 C sugar
4 eggs
1 T baking powder
3/4 t salt
2 C milk
2 t vanilla
1 T cinnamon
6 C Old Fashion Oatmeal
1 bag craisins

Preheat oven to 350. Whisk together apple sauce, sugar, and eggs. Add baking powder and salt and blend well. Add milk, vanilla, and cinnamon. Pour oats and craisins on top and mix thoroughly. Spray 9x13 pan and fill with oatmil mixture. Even out and bake 45 minutes.
Serve warm with milk poured on top (this is how my kids like it) or just plain (how I like it).

This is seriously the easiest thing to make! I whipped it up and got it in the oven in the amount of time it took Jason to read the kids a book...in the other room! The kids finished up the granola tonight for a bedtime snack so I decided to make up this baked oatmeal to have for the next few mornings. It's in the oven NOW. I'm currently smelling the rain and cinnamon! Yum! Maybe I will have some tonight with a cup of tea after the kids go to bed! Which I hope is very, very soon. Please God make it be soon.

Granola and Homemade Yogurt!

I can't take credit for this great Granola recipe. I got it a long time ago from my sister in law, Erin. I'm sure it hasn't stayed the same for her over the years. I really should get an update, but I really love it as it is right now.  I can only take about 5% credit for the posted recipe because I've added some things. I have a hard time leaving a recipe alone . . . even if it's pretty great to begin with.

Granola
5 cups old fashion rolled oats
3/4 cup flaked coconut
3/3 cup sliced almonds
3/4 cup honey
1/4 cup apple sauce
2 tsp cinnamon
1/4 tsp nutmeg
1 cup flaxseed meal
3 cups dried cranberries (add after baking)
I've also made this with dried blueberries before and it was SO good. This week I used dried cranberries and golden grapes. Maybe my favorite so far.
Combine all ingredients in a bowl. Spread onto a cookie sheet. Bake @ 300 degrees for 30-35 min. stirring at 15 mins. I always have to bake it WAY longer when I make a double or triple batch like I usually do. It depends on how you like your granola.

Payton had so much fun pouring and mixing all the ingredients in a big bowl. She was very proud and excited to eat the finished product! Our kids love this granola and just eat it like cereal with milk. FYI this jar is almost gone and I made it on Monday. Good thing there's another batch in the freezer! I prefer it dry as a snack or on top of yogurt. Yum.

Speaking of yogurt! I also made homemade yogurt this week . . . in my crock pot! It turned out great and next time I will be making a double batch for sure! Yay for Probiotics that my family really needs right now after several months of being in and out of sicknesses!
The steps to making your own yogurt are so easy and way cheaper then buying a good quality yogurt! My dear friend, Caitlin, got brave with me this week and decided to make some too. She saved me a step and blogged about it.  Thanks Caitlin! Check it out here-Crock pot Yogurt! Dessert for me tonight was yogurt with granola on top! Just wish I had some frozen blueberries!

Tonights Supper

Tonight supper was Crock Pot Chicken. But not just any crock pot chicken. This was my very first time EVER working with a whole chicken and it turned out great. Here's what I did-

1 whole chicken, (I pulled off as much skin as I could, rinsed it, and patted it dry. yuck!)
Dry rub mixer- (I think this is everything I put on it this time around. Next time I'm sure I'll try something totally new. So you should experiment and let me know how it goes for you!)
-3 tsp Seasoning Salt
-1 tsp Parsley
-1 tsp Oregano
-1/2 tsp black pepper
-1/2 tsp ground Cayenne Red Pepper
-1/2 tsp Curry powder
Mix all those together and rub all over inside and out of chicken.
Quarter one onion and spread in the bottom of the crock pot. place the chicken (I did it breast side up) on top of the onions. Quarter one more onion and one peeled and cored apple and push it into the inside of the chicken. Then I poured about half a cup of water in. Cook on low for about 7-8 hours.
I also quartered several potatoes and threw those on top of the chicken. A few times throughout the day I took some of the juice from the bottom of the crock pot and poured if over the chicken.

When it was ready I took the potatoes and the one apple out and mashed them together along with 3-4 tsp butter, milk, and some of the chicken juice for desired consistency. Salt and pepper to taste. YUM!

After supper I picked the leftover meat off the bone. The bones got boiled in water for a while. I'll used that water and the juice from the first meal along with the leftover chicken to make soup this weekend!
